In designing the restaurant’s menu, he embraces the “Km Italia” philosophy: a conscious vision of short supply chains that enhances local products while celebrating the country’s culinary icons, ensuring quality, identity, and sustainability in every dish.
His signature creation, “Il mio inizio”, is a tribute to Calabria, his homeland, and to family Sundays: a basket of eggplant filled with handmade orecchiette and fresh sausage, finished tableside with a cascade of melted provola cheese. An evocative dish that elevates the simplicity of home cooking into an elegant and unforgettable experience.
