The menu features recipes with Adriatic fish and ingredients that follow the rhythm of the seasons, like the Seabass tartare with ginger guacamole or the Cuttlefish julienne over a purple-potato and green-asparagus mousse. Gragnano pasta, a traditional classic, and the consummately crafted homemade pastas are always accompanied by Mediterranean-inspired sauces. The quintessential Wiener schnitzel with paprika potatoes is a homage to Trieste’s Austro-Hungarian past.
